How do we love thee? Let us count the ways.

We love how multifaceted you are. There are endless taste possibilities to explore; sweet, salty, savoury, bitter, sweet AND savoury. Your diversity truly allows for a gastronomic experience.

We love your flexibility. You can be eaten at 5:00AM, you can be eaten at 11:00AM. Some restaurants even serve you all day

We love that when we awaken that you’re one of the first things we think about. Is it because our stomachs are rumbling? Maybe. Is it because our coffee pots have automatic timers that wake us up to aromatic splendours? Quite possibly. Regardless the reason we love that feeling of anticipation to break fast.

Which is why it seemed silly to post anything BUT breakfast suggestions for this week’s recipe round up.

One of our awesome users, @keto.vegetarian.girl, is helping us along again with her awesome recipe cache! When we asked her fave breakfast recipe she told us she’s pretty smitten with any “noatmeal” recipe… that’s when we stumbled about this Snickers Noatmeal recipe. Snickers. For breakfast. Hello!

No-Bake Beetroot, orange, and chocolate tart (GF& Vegan) . Who is up for a slice?😉💗 . Recipe: 20cm (8”) tart tin with removable bottom ■Base (Dry) 50 g gluten free oats 90 g raw almonds (preferably activated) 2 Tbsp. sunflower seeds 2 Tbsp. raw cacao powder 1/8 tsp pink salt (Wet) 5 pitted soft Medjool dates (100g) 2 Tbsp. melted cacao butter ■Chocolate layer: 100g raw cashews (soaked 4-6 hours and rinsed) 1/2 cup (120ml) coconut cream 3 Tbsp. melted raw cacao butter 3-4 Tbsp. maple syrup 2 Tbsp. + 2 tsp raw cacao powder 1/8 tsp pink salt . ■Beetroot & Orange layer: 100g raw cashews (soaked 4-6 hours and rinsed) 1/4 cup (60ml) coconut cream 1/4 cup (60ml) fresh orange juice 4 Tbsp. maple syrup 3 Tbsp. melted raw cacao butter 2 Tbsp. fresh beetroot juice (I juiced beetroot stems) 1 Tbsp. lemon juice Pinch of pink salt . ■Method: 1. Place every dry ingredient for the base in a food processor. Process well until it reaches the consistency of flour. 2. Add every wet ingredient into the food processor and process until combined well. 3. Press the mixture against the sides and the bottom of the tart tin. 4. Put every ingredient for the chocolate layer in a high-speed blender and blend well. Layer it over the base and freeze it until set. 5. Repeat the same process for the beetroot & orange layer. Freeze it over night. 6. Take out the cake from the tin and garnish with your choice of fruit. . This is a #throwbackthursday of my all time favorite keto recipe. I made these COMPLETELY #sweetenerfree pumpkin spice muffins for snack this week and was instantly kicking myself for letting them fall off my radar. A more detailed recipe including #vegan substitutes is on my website, ketovegetariangirl.com (or linked in bio) ****** In the words of my husband "holy sh** these are the best baked things you've ever made" followed by repeatedly urging me to "just look at the inside texture" as if I wasn't also eating one 😂. ****** Ingredients: -1 cup pumpkin puree -5 tablespoons melted butter -2 eggs -1 tsp vanilla extract *** -2 cups blanched almond flour -1/4 cup coconut flour (you can sub protein powder for extra protein) -2 tbsp flaxseed meal -1 tbsp ground psyllium husk (optional but reduces crumbs) -1 tsp baking soda -2 tsp baking powder -2 tsp pumpkin spice -1/2 tsp salt *** For the buttercream frosting: -8oz cream cheese, softened -1 stick butter, softened -2-4 tbsp heavy cream (for texture) -a very generous splash of vanilla ***************************************** Muffin Directions: Preheat oven to 350. Grease a muffin tin. Take out your cream cheese and butter to soften if you're making frosting. Mix dry ingredients. In a separate bowl, melt butter, then stir in pumpkin puree, and finally whisk in eggs. Gently combine wet and dry: do not over mix. Batter will be thick. Portion out into 12 muffins. Flatten the top out the best you can - these muffins don't rise. Bake about 20 minutes, until toothpick inserted comes out clean and top browns. ***************************************** Frosting directions: combine everything using a hand mixer. Don't frost the muffins until you're ready to eat them, but the frosting will last in a tub in the fridge for a week. ***************************************** Makes 12 muffins. Muffin: 188 cal / 3.6 net carb / 16 fat / 5.5 protein each. Frosting: 147cal / 1 net carb / 16 fat / 1 protein each.

KETO SUSHI 🍣 🤤 . . CALORIES/MACROS 🤓 This makes a total of 3⃣ servings of Keto Sushi. Each serving is just over 1 1/2 rolls, which comes out to be 353 Calories, 26g Fats, 6g Net Carbs, and 18g Protein. . INGREDIENTS 👩‍🍳 👨‍🍳 -16 oz. Cauliflower 🥦 -6 oz. Cream Cheese, softened 🧀 -1-2 tbsp. Rice Vinegar (unseasoned) -1 tbsp. Soy Sauce (or coconut aminos) -5 sheets Nori -1 6 inch Cucumber 🥒 -1/2 medium Avocado 🥑 -5 oz. Smoked Salmon (or any seafood) 🐟 . DIRECTIONS 🧭 1. Using a food processor, rice the cauliflower into rice-sized pieces by pulsing. 2. Slice the cucumber on each end, then place the cucumber upright and slice off each side.Discard the middle and slice about 2 side pieces into small strips. Set aside in the fridge. 3. In a very hot pan, add cauliflower rice and cook. Season with soy sauce as the cooking process happens, about 1 tbsp. 4. Once the cauliflower is finished up and dried out some, add to a bowl with cream cheese and rice vinegar. Mix together well and set in the fridge until cool. 5. Once the rice 🍚 mixture is cooled, slice 1/2 an avocado into small strips and scoop out of the shell. 6. Put a nori sheet down on a bamboo roller covered with saran wrap (this helps with sticking). Yes, traditionally sushi is made from seafood but with the culinary creativity of the vegan community you can bet there is a recipe out there – or 173,849 – to satisfy and delight. We aren’t sure if it’s the rainbow theme of this recipe, the fact that it’s all loaded into one stack of handheld goodness or the fact that our mouths watered when we read the ingredients that made this a must-have for our Recipe Round Up this week.

The avocado roll is a staple of the sushi world. A building block in the foundation of sushi rolls everywhere – which is why it wouldn’t be right to not include it this week. Maybe that’s dramatic or maybe it’s just that good. Make this recipe tonight to see for yourself!

Gluten Free sushi eaters get all the goodies as this fare is typically gluten free. Be sure to dive in (have you noticed the amount of sea puns laced throughout this blog?) to these salmon rolls.

Sushi With Salmon And Avocado 6 sheets sushi seaweed aka nori (make sure you get seaweed specific for sushi-making, which it should state on the package) 1 batch prepared sushi rice (its not easy to make sushi rice, just look it up before starting) 1/2 lb sushi-grade raw salmon or desired raw fish of choice 1 avocado sliced (you can add more vegetables, but not too much) soy sauce for serving 1. Make the sushi rice and prepare the fllings. To be eaten safely, sushi-grade fish must be handled correctly: It should be frozen for at least one day to kill any parasites. 2. Carefully wave a 4-by-7 1/2-inch sheet of nori over an open flame until crisp and fragrant, then transfer to a bamboo mat. Wet your hands in water that's seasoned with rice vinegar, then scoop up 1/2 cup of sushi rice. Gently form the rice into a loosely packed, palm-width log. Place the log at one edge of the nori and begin spreading it across to the other side. 3. Continue to spread the rice all over the nori, rewetting your hands as necessary, until an even layer covers all but a 1/4-inch border at the top edge. Lay about 2 ounces of the filling (either a single ingredient or a combination) along the center of the rice. 4. Roll the bamboo mat up and away from you, curling the nori and rice around the filling; use your fingers to hold the filling in place as you roll. Secure the roll with the 1/4-inch flap of nori. Once the roll is sealed, gently squeeze, pressing gently on the top and sides, to compress the roll slightly and form a rough square shape. Press on each end of the roll to make a neat surface. 5. Lift the roll off the bamboo mat and transfer it to a work surface. Dip the tip of a long, sharp knife into vinegar water; let the water run down the length of the blade. Using a long slicing motion, cut the maki in half, then cut each half into thirds to form six even pieces, rewetting the blade as needed. Serve. 6. Enjoy🤗

INGREDIENTS •3 tablespoons olive oil •16 ounces extra firm tofu (press out some liquid first) •2 tablespoons taco seasoning (add about 1 teaspoon salt if it’s unsalted) •2 chipotle peppers, minced •1/3 to 1/2 cup salsa Cashew Queso: •1 cup cashews •1/2 cup water •1 can diced green chiles (or less, to taste) •1 teaspoon taco seasoning (add a pinch of salt if it’s unsalted) Crunchwraps: •huge burrito-sized flour tortillas •something crunchy: tostadas or tortilla chips •roasted vegetables •black beans •avocados •fresh stuff: tomatoes, cabbage slaw, lettuce, cilantro salsa INSTRUCTIONS Sofritas Tofu: Heat oil over medium high heat in a large nonstick skillet. Add tofu and break apart into crumbles. Add taco seasoning, salt, chipotles, and salsa. Get it all going in the pan, nice and hot. Finish by letting everything sit without stirring for another 10+ minutes (adding oil to prevent sticking as needed) until you get some nice browned, almost-crunchy pieces. Cashew Queso: Blend everything together aggressively until smooth! Crunch Wrap Time: Lay a large tortilla on a flat surface. Layer: tofu, queso, crunchy stuff, and any other extras you want in there. Fold in the edges of the tortilla toward the center. Place in a hot oiled skillet, seam side down. Cook for a few minutes on each side until the exterior is firm, crunchy, and golden brown. Espresso Chocolate Chuck Ice Cream – Ice cream base: • 1/2 cup half and half • 1/2 cup unsweetened almond milk • 1 cup heavy cream • 4 tbsp sweetener(I used @wholeearthsweetener ) • 3 egg yolks • 1 scoop collagen(I used @furtherfood ) • pinch of salt – Espresso chocolate chunk: • 1 tbsp espresso coffee grounds(use less if you want a lighter espresso flavor) • 2 oz chocolate chunks of choice(I used two @choczero peanut bark bars) _ 1. Add your heavy cream, milk, half and half, sweetener, pinch of salt to a saucepan and bring to a boil(if you’re making this espresso ice cream, also add the espresso grounds at this point) 2. Add your egg yolks to a bowl and whisk them a bit. Slowly add some of the hot milk mixture to the yolks and whisk it all together(this will help the eggs not ‘scramble’ 3. Whisk in the egg mixture to the saucepan and add the collagen. Continue whisking until liquid has thickened some. 4. Once thickened, remove from heat and let cool 5. Once cooled, transfer to a container and place it in the fridge overnight(at least 12 hours, you want it super cold) 6. Take your ice cream maker and set it up. Place liquid into ice cream maker and mix until it sets(every machine is different, so times will vary, stop it when it’s at a desired consistency) 7. Warm up anywhere and you're set!! #danksoups #warm #delicious #goodtothelastdrop #ketosoups #ketoguideforbeginners prep time 5 mins/cook time 25 mins/total time 30 mins INGREDIENTS 2 tbsp olive oil or butter 1/4 cup chopped onion 2 cloves garlic 1/2 tsp salt 1/8 tsp black pepper 1 tsp pesto sauce — optional 1/2 tsp dried oregano 1 tsp dried basil 1 tbsp tomato paste — optional 10 tomatoes, skinned, seeded and chopped — or two 14.5 oz cans of peeled tomatoes 1 tsp honey, sugar or erythritol — optional 3 cups water 1/3 cup heavy cream 2/3 cup feta cheese — crumbled INSTRUCTIONS Heat olive oil (butter) over medium heat in a large pot (Dutch Oven). Add the onion and cook for 2 minutes, stirring frequently. Add the garlic and cook for 1 minute. Add tomatoes, salt, pepper, pesto (optional), oregano, basil, tomato paste and water. Bring to a boil, then reduce to a simmer. Add sweetener. Cook on medium heat for 20 minutes, until the tomatoes are tender and cooker. Using an immersion blender, blend until smooth. It might be in the 70s again today but I’m still loving soup this time of year! This 10 minute vegan black bean soup is seriously the easiest lunch or dinner recipe! This 10 minute one pot recipe is almost as easy as opening a can of soup but it’s packed with much more flavor and you get to control the ingredients! Here’s what you will need: – Organic black beans, cooked (either from a can or cooked ahead of time) – Fire roasted tomatoes, crushed – Red onion – Vegetable broth – Chili powder – Garlic powder – Cumin – Salt Simply sauté the red onion for 2 minutes. Add the rest of the ingredients and bring to gentle boil in a covered pot. Blend up about 1/4 of the soup (I used my @mealthy immersion blender in the pot – just 4 quick 1 second pulses) Stir the blended soup together and serve hot! Also if you don’t eat beans you could totally make this with cooked beef or ground turkey (about 1/2 pound) and add 1 tsp arrowroot flour to help thicken! What toppings would you add to this soup? Don’t let the name fool you – Moroccan Chickpea and Sweet Potato Soup with Zatar Pitta Chips might sound like a mouthful (we definitely want a mouthful, or maybe 25) – but this 15 minute vegetarian soup is equal parts easy and delicious.

Moroccan Chickpea and Sweet Potato Soup with Zatar Pitta Crisps. Well that’s a pretentious name for a 15 minute vegan soup and some shop bought pittas which are halved, sprinkled with Zatar and olive oil then toasted for 5 minutes. When did I become so Cheffy?! 😂 this meat free Monday offering packs a punch and without sounding like a broken record, make a batch of it so that you have leftovers for lunch during the week or for the freezer. INGREDIENTS for 4-6 For the soup: 1 onion 10cm ginger peeled and roughly chopped 3 garlic cloves Bunch fresh coriander 1 tsp ground cinnamon 2 tsp ground cumin 2 tsp ground coriander 1 tbsp olive oil 2 cans chopped tomatoes or passata 2 cans chickpeas drained 500g sweet potatoes peeled and cubed (approx 2cm sq) 1 litre vegetable stock 100g frozen edamame Beans Juice of a lemon Fresh coriander For the Zatar Pitta Crisps 6 pitta breads 2 tsp Zatar 1 garlic clove Olive oil Whizz together the onion, garlic, ginger, coriander and olive oil in a blender or bullet and add to a pan on a medium heat. Soften and colour the mix before adding the dried spices. Add the chopped tomatoes, sweet potatoes, stock and chickpeas. Season and simmer for 5-10 minutes. Half the pittas so you that you have 2 thin disks from each pitta. Swipe the garlic clove twice on each piece of bread. Sprinkle with the Zatar and drizzle with olive oil and place on a baking sheet. Put in a hot oven or under the grill for 3-5 minutes keeping a close eye as they’ll burn quickly. I’ve Finally perfected the cookie recipe! After trying tons of different versions, I’ve finally came up with these amazing #ketocookies . 1⃣ Ingredients: 2 1/2 cup Blanched almond flour 6.5 tbsp Butter 1 large Egg 1/2 cup Erythritol (or monk fruit sweetener) 1 tsp Vanilla extract 1 tsp Blackstrap molasses 1/2 cup Sugar-free dark chocolate chips! 2⃣directions: Preheat the oven to 350 degrees. Line a cookie sheet with parchment paper. Use a hand mixer or stand mixer to beat together the butter and erythritol, until it's fluffy and light in color. Beat in the egg, vanilla extract, and blackstrap molasses. Beat in the almond flour, 1/2 cup at a time. Fold in the chocolate chips. Scoop out balls with a spoon, then flatten each cookie to about 1/3 in thick. (You can make them thicker or thinner to your liking. Keep in mind they only spread a little and don't thin out during baking, so make them as thin as you want them when done! Enjoy! #ketorecipes

Now Cookie Monster can go vegan 😉 Choc Chunk, S’mores and Oreo Chocolate Chip Cookies Recipe 🍪 by @sixvegansisters Ingredients (~12 cookies) 2 1/4 cup flour 1 tsp salt 1 tsp baking soda 2 tsp cornstarch 3/4 cup vegan margarine (from a tub, not the sticks) 1/4 cup nondairy milk (like almond or soy) 1 cup brown sugar 1/4 cup sugar 2 tsp vanilla extract 1 1/2 cup mini vegan chocolate chips Directions: Preheat the oven to 350°F. Line two baking sheets with parchment paper. In a small mixing bowl, whisk the flour, salt, baking soda, and cornstarch. In a larger mixing bowl, add the margarine, milk, sugars, and vanilla. Beat with an electric mixer. Add ~half of the flour mixture to the wet mixture and use a rubber scraper to combine. Add the rest and mix until combined. Fold in the chocolate chips. Using a large scooper, place balls of dough on your baking sheet.
